Curdling is the worst fear of an Italian soda fan.
The base recipe for this treat is: club soda, ice, flavored syrup, and milk (or half and half).
Start by putting the ice in the cup, followed by the soda water. Next in logical order is the syrup, finishing with a splash of half and half milk for a touch of creaminess.
After a stir to mix the ingredients, you may start to drink the masterpiece.
The taste is incredible, that is until little flakes start to float through the straw. For some reason the half and half that was had added starts to curdle, within two minutes the entire drink is ruined.
Asking yourself why this happened, you proceeded to look online to see how a proper Italian soda is made without curdling.
After visiting various websites, three different ways to mix the ingredients were found.
The first recipe was the most basic, adding the ice at the end and not at the beginning. This technique did absolutely nothing. This means that it is some type of reaction between the soda water and the milk.
Recipe number two has you make the soda the way first thought, but instead pour the milk down the straw. This was the strangest way of the three, and in turn it did not work.
After the first two recipes did not work, you go for number three. Start by adding the milk and syrup to the glass and mixing, so far there should be no curdling. Then you add the soda water followed by the ice.
After waiting for five minutes the soda was clear.
